Essential tripod and bag recommendations for Canon Rebel T7 users?

I finally picked up a Rebel T7 for a hiking trip to the Catskills in three weeks and now Im stuck on the accessories. I saw the AmazonBasics 60-inch tripod recommended for beginners but then some people say its way too shaky for outdoor wind... my logic was to get something light for the trail but I dont want my camera falling over.

For bags I was looking at the Lowepro Tahoe BP 150 but I cant tell if itll actually fit the body plus my extra 75-300mm lens. Budget is roughly $150 for both items combined. Should I just get a better tripod and a cheap sleeve instead of a full backpack? I'm just kinda stuck on what's actually essential vs just marketing...

I've spent way too much money over the years trying to find that sweet spot between weight and stability for hiking. If you're heading to the Catskills, the wind on those overlooks will easily knock over a light tripod unless you hang your pack from the center column hook. In my experience, focusing on a tripod with a ball head and decent leg locks is way more important than just going for the lightest thing you can find.
